Bruschetta

Easy additional dishes feel like a treat and can uplift a simple dinner. But of course, they taste great by themselves too. Here is a recipe for Bruschetta and honestly, it doesn't get more simple than that!


Medium Sized Baguette (I like a grainy version)
5 Tomatoes
1 small Onion
3 Gloves of Garlic
Olive Oil
Balsamico Vinegar
Salt
Black Pepper
Basil

Start with slicing the bread. Place the slices in a pan and drizzle some olive oil on top. Wait till the bread is slightly toasted then turn to the other side. take the bread out off the pan when both sides are toasted and place them aside (olive oil side up).
Dice the onion and the tomatoes - make sure you dice both, especially the onions, very fine.
Mix the onion, tomatoes with some olive oil and balsamic vinegar. Add salt and ground black pepper to taste. Pluck some fresh basil in too. Mix.


Let's get back to the bread: peel the garlic and rub the glove on the toasted bread. 
Place the tomato mix on top of the bread. 
I like to drizzle a bit more balsamic on top.



If you eat cheese, why not place a thin slice of mozzarella on top too?
