Basil Pesto

I'm sure there are many situations like mine today... what to eat for dinner when you're out of groceries? I stayed a little bit longer than planned on one spot (I am travelling at the moment) and there is almost no fresh stuff in this household anymore. Still, I need to eat. And I really want a warm and satisfying (and somewhat healthy maybe) meal. Time to harvest the basil!

leaves from one basil plant
2 garlic cloves (peeled obviously)
80gr roasted seeds (I used a mix of sunflower and pumpkin seeds)
50gr parmesan
black pepper
2 tbsp olive oil
2 tbsp water 

Roast the seeds in a pan. I used pumpkin and sunflower seeds because that's what I had but pine nuts or even walnuts work perfectly well too. 
When roasting seeds you don't need any additional oil (most seeds are oily enough) but you have to pay attention not to burn them! Move them a little while roasting. You will see when they start turning dark - turn off the heat and remove the seeds from the hot pan immediately (otherwise they keep on roasting and will eventually burn).
Throw all your ingredients into a food processor.
Blend until you get a smooth paste. If necessary add a little more water. Season to taste.

I like to combine my pesto with pasta (classic) but I really enjoy finishing the leftover with some bread the following day.
