Carrot Cake

I like cake. I also like healthy food. Key is to not go overboard with the sugar and maybe smuggle some good stuff in as well. And of course, to keep it homemade - my golden rule is: you want cake, make it yourself! So here is a recipe for carrot cake in case you're interested!

225gr flour
100gr margarine or butter
2 eggs (or egg substitutes)
50gr sugar
1/2tsp baking powder
1/2tsp baking soda
1tbsp apple cider vinegar
225gr shredded carrots
100gr chopped walnuts
50ml milk

Mix the flour and sugar, add the spices, the baking powder and the baking soda. Pour in the apple cider vinegar. Add the margarine, milk and the eggs and blend until you get a smooth dough. Carrots and walnuts are stirred in last. Pour into a loaf tin and bake for at least 45 minutes at 180°C. Violá!

If you like to add a frosting here are two versions, one of them vegan. Wait till your cake is fully cooled down before adding the frosting!

Buttercream frosting:
100 gr cream cheese
50gr butter/margarine 
powdered sugar (how much depends on your personal taste for sweetness)
juice of half a lemon

Mix all of the above.

Cashew frosting:
350gr cashew nuts
80ml water
100gr melted coconut oil
juice of half a lemon
a little bit of salt

Soak your cashews overnight. Blend all the ingredients together using a food processor until you get a smooth butter. Sweeten to taste. You can use powdered sugar, honey, agave syrup, just to name a few examples.
