Buckwheat & Chia Seed Pancakes

When there is time to celebrate breakfast - does much else feel as luxurious? So why not throw in some homemade pancakes to make it perfect? I promise these ones are super easy to make: they come out nice and fluffy and match well whether you prefer a sweet or savoury topping.





150gr flour
75gr buckwheat flour
1tsp baking soda
1tbsp apple cider vinegar
pinch of salt
1tbsp sugar
250ml milk (I prefer oat milk)
1tbsp oil (I use sunflower seed oil)
 Chia seeds (as many as you like)

Mix all dry ingredients aside from the chia seeds. Add the apple cider vinegar. Stir in the milk and the oil. Blend until you have a smooth dough. Add the Chia seeds. 
Slightly preheat your pan, you won't need any oil for baking them. Because they grow a little I don't make mine too big - but that's, of course, a personal preference. Flip them over when you see the sides slightly harden, that's when you can easily slide under with a spatula (listen, I wish I could do an in-the-air-flip but I can't...). Wait till both sides are golden.
